Da ich heute den ganzen Tag mal wieder krank war hatte ich Zeit und Lust mal wieder einen neuen Kuchen zu backen 🙂 Wir hatten noch eine überreife Mango im Kühlschrank das mir dir Idee für eine Mango Torte kam. Ich hab also einfach mal angefangen und entstanden ist ein Kuchen mit luftigen Vanille Boden und einer atemberaubenden Mango- Creme. Weil ich keine Gelatine finden konnte hab ich Ager Ager verwendet, deshalb ist er nicht ganz so fest geworden mit Gelatine klappt es sicher besser 🙂
Was ihr alles Benötigt:
Für den Boden
- 2 Eidotter
- 2 geschlagene Eiweiß
- 20g Kokosmehl (Könnt auch jedes andere nehmen)
- 40g Haferflocken
- 1 Teelöffel Backpulver
- 1 Esslöffel Vanille Protein Pulver
- 70 ml Milch
Für die Creme
- 1 Päckchen Ager Ager ( oder 5 Blatt Gelatine)
- 1 Reife Mango
- 2 geschlagene Eiweiß
- 100 g Jogurt
- etwas Zitronensaft
- 100g Topfen
- 2 Esslöffel Kokosflocken
- Etwas zum süßen Ahornsirup Stevia etc.
Wie wird’s gemacht?
Für den Boden verrührt ihr das Kokosmehl mit den Haferflocken, Proteinpulver und Backpulver geben dann die Eigelb und die Milch hinzu. Am Schluss die Eiklar unterheben das Ganze muss jetzt bei 180 Grad für 20 min in den Ofen.
In der Zwischenzeit schneidet ihr die Mango klein und erhitzt sie mit etwas Zitronensaft in einem kleinen Topf. Wenn sie etwas weicher wird nehmt ihr den Topf vom Herd und püriert alles fein säuberlich. Danach rührt ihr den Ager Ager in 50 ml Flüssigkeit klar und gebt es dann zu eurer Mango Mischung. Kocht alles nochmal 1-2 min auf, nehmt es dann vom Herd und lasst es auskühlen. Als Nächstes verrührt ihr Jogurt, Topfen, Süßungsmittel und die Kokosflocken, fügt dann die Mango Mischung hinzu. Jetzt müsst ihr nur noch die Steifen Eiklar unterheben und ab auf den abgekühlten Tortenboden damit.
Eure Torte muss jetzt für mindestens 3 Stunden in den Kühlschrank, danach könnt ihr sie noch mit Mango dekorieren.

Since I was sick again today I had the time to bake a new cake 🙂 We had an overripe mango in the Refrigerator so I decided to make a mango pie I just started and created a cake with a vanilla cake base and a delicious mango cream. Because I could not find gelatine I used Ager Ager, so the cake has not become so firmly I think Gelatine works better 🙂
What you need:
For the floor
• 2 egg yolks
• 2 beaten egg whites
• 20g coconut flour
• 40g rolled oats
• 1 teaspoon baking powder
• 1 tablespoon of vanilla protein powder
• 70 ml milk
For the cream
• 1 packet Ager Ager (or 5 sheets of gelatine)
• 1 ripe mango
• 2 beaten egg whites
• 100 g yoghurt
• a little lemon juice
• 100g quark
• 2 tablespoons coconut flakes
• Something to sweet maple syrup Stevia etc.
Introduction
For the cake base stir the coconut flour with oats, protein powder and baking powder then add the egg yolk and milk. Fold the egg Whites carefully fold under the mixture. Bake at 180 degrees about 20 minutes.
In the meantime, you cut the mango into small pieces and let it boil with a little lemon juice and some sweetener. If it is softer you take the pan off the heat and puree everything neatly. Add the Ager Ager or the gelatine. Cook everything again for about 1-2 min , then take it off the heat and let it cool down. Mix the yogurt, quark, the coconut flakes, add it to the mango puree. Now fold in the egg Whites. Give everything well in the form and set it in the fridge for 3 hours. 🙂
